Mr. Roger Federer, Barramundi and extra salt…

So today was my second day on “Sauce” section, the hot section in Cafe Sydney that does all the Pork, Lamb, Prawns and Barramundi and it just so happened that I got the chance to serve the tennis star, Roger Federer. He ordered the Barramundi with extra salt… but yeah it’s a pretty cool dish, Barramundi fillet cooked with skin on until crispy, a “smear” of fennel puree, some confit fennel and squid, a bit of cavolonero, a crab mousse stuffed zucchini flower with is fried in a tempura batter and then the dish is finished off with a beurre blanc sauce, all in all.. pretty awesome. Not too bad for it only being my second day…
